Best Ever Brownies



INGREDIENTS:

Butter - 100gms
Milk/Dark Chocolate - 100gms
Cocoa powder - 45gms
Coffee powder - 1/2 tbs
Castor sugar/powdered sugar - 200gms

Brown sugar - 50gms
Vannila essence - 1 tsp
Salt - 1tsp
Egg - 3
All purpose flour - 55gms
Walnuts as required


INSTRUCTIONS:

- Mix Milk chocolate, melter butter, half of the cocoa powder, coffee powder and keep it aside for 10 mins.
- In a separate bowl take the castor sugar, brown sugar, eggs and beat well till fluffy.
- Mix the egg mix into chocolate mix and then sieve all purpose flour and remaining cocoa powder.
- Add vanilla essence, salt and walnuts.
- Meanwhile preheat oven to 180 deg cel for 10 mins
- Pour the cake mix into a tray and bake for 45 mins.

Note - 

45 mins baking would be sufficient. 
Don't worry if the centre is moist filled. That is the good indication.

Healthy momos with wheat flour


Preparation time - 20 mins
Makes around 25 momos
Ingredients

Wheat flour -1.5 cups
Salt  as required
Water - 3/4 cups or as required to knead the dough
Ginger - chopped 1 table spoon

garlic - chopped 1 table spoon
Spring onions - 2 table spoons
Onion - 1
cabage - 1 cup
minced chicken - 1 cup
soya sauce - 1 table spoon
Vinegar - 1 table spoon
Pepper powder - 1 table spoon

Instructions

- Mix wheat flour, salt and water and make a medium soft dough and rest it for 15 mins.
- Take a bowl, Add onions, ginger, garlic, cabbage, minced chicken, soya sauce, vinegar ,spring onions, pepper powder and salt. 
- Mix well until its smooth.Filling is ready.
- Roll the dough to a thin sheets and place the filling inside.
- Fold the edges carefully in a desired shape.
- Place it in a steamer and steam for 15 mins.

Note 
- This can be served with hot and spicy garlic sauce and ketchup.
- Ensure that the dough is spreaded as a thin sheets.
- You can reheat the momos and enjoy when its hot.

Homemade Carrot and tomato jam

                                                      Cooking time - 45 mins
                                                      Preparation time - 30 mins













INGREDIENTS:

CARROT - 2
TOMATOES - 3
DRIED GINGER - 1 INCH PIECE CRUSHED
CARDAMOM - 3 CRUSHED
CASHEW & RAISINS - 10 EACH

SUGAR SYRUP - 1/2 CUP(LEFT OVER FROM ANY PREVIOUS SWEETS) OR 1/2 CUP SUGAR/JAGGERY

INSTRUCTION:

Step 1 - Steam carrots / boil carrots and grind as puree
Step 2 - Blanch tomatoes in hot water and peel off skin and grind as puree.
Step 3- Add ghee in a kadai and pour purees
Step 4 - Cook till the raw smell leaves and add Jaggery/sugar syrup
Step 5- Add cardamom, dried ginger and cook till the mixture swirls and leaves the kauai
Step 6 - Garnish with Cashews and serve with Roti, variety rice, Biryani, Bread, etc

Note - Refregirate for 7 days to enjoy the freshness

Home made Badusha/balushahi

Makes - 10
Cooking time - 45 mins

Ingredients:

Maida- 1 1/4 cups
Butter- 1/4 cup
Oil - 1 tbs
Curd - 2tbs thick
Salt - 1 tsp
Sugar- 2 tbs for dough
Sugar - 1 cup for syrup
Water - 1 cup for syrup
Baking soda - 1 tsp
Cardamom- 3


Preparation:

Step1 - Mix softened butter, oil, curd, sugar, baking soda one by one.
Step 2- Add maida and fold it gently and rest it for 5 mins
Step 3 - Make sugar syrup by adding 1 cup of sugar and 1 cup of water in a saucepan and cook till one string consistency.
Step 4 -Make small balls and shape it as Badusha.
Step 5 - Fry then in low flame
Step 6 - Drop them in sugar syrup and soak for 5 mins.

Note- Fry the Badusha in low flame.
           Thick curd yields better result

Authentic Coastal Style Crab masala


Serves - 4
Cooking time - 30 mins
Tastes good when served with Rasam, Sambar rice



Ingredients:

Sea Crab - 1 kg
Onion finely chopped - 2
Ginger - 4 to 5 inches long
Garlic - 2 or 20 pods
Green chilli - 4/5 according to taste

Oil , Salt - as required
Turmeric powder - 1 tea spoon
Tomatoes - 2 big
Mustard seeds - 1 table spoon
Fennel Seeds - 1 table spoon
Coconut (Coarsely ground) - 1/2 cup
Corriander leaves - for garnishing

Preparation:

Step 1:
Clean crab nicely.
Step 2:
Grind Chilli, Garlic and Ginger to a coarse paste
Step 3:
Heat oil in a kauai and tadka with mustard seeds , Curry leaves and Fennel
Step 4:
Saute onions and add ginger garlic and green chilli paste. Cook till raw smell leaves.
Step 5:
Add crab and mix well. Cover the kadai and cook till water separates from the crab. Adjust with salt and turmeric powder.
Step 6: 
Once Crab is cooked add tomatoes. Again cover the kadai with the lid and cook the tomatoes are mushy.
Step 7:
Add coarsely ground crab and cook for about 5 mins.
Step 8:
Garnish with coriander leaves

Note:

Do not add water while cooking crab as already crab leaves sufficient water which is required for cooking.

Nutritious Wheat Banana Pancake

Serves - 1
Cooking time - 10 mins
Preparation time - 5 mins


INGREDIENTS:

Wheat flour - 100gms
Banana small - 2
Elachi - 2
Badam - 3

Cashew - 3
Ghee
Water as required
Salt a pinch
Sugar - 2 tablespoons

PREPARATION:

Step 1 : Grind Badam, Cashew, Elachi and Sugar into fine powder
Step 2 : Mash Banana well in a bowl and add Wheat flour, Ground nuts powder, Sugar and Salt as required
Step 3 : Add water and make it as a batter
Step 4 : Heat ghee in a pan and pour a laddle full of batter for one pancake and cook both the sides well

Note:
This pancake can be given to toddlers, older children as its packed with nutrients.
It tastes good if made with Robusta, Elachi bananas.

Millet Dosa


  • 1 cup pearl millet
  • 1/3 cup pressed rice
  • 1 teaspoon salt
  • 2 cup water
  • 1/4 cup urad dal
  • 1 teaspoon fenugreek seeds
  • 2 tablespoon refined oil

Method:

1. Soak all ingredients  except pressed rice in water for about 6 hrs.
2. Grind soaked ingredients along with pressed rice and leave it overnight for fermentation.
3. Make think crisp dosas and serve hot with chutney.

Pan Fried Chilli Fish


INGREDIENTS
Fish fillet (Basa/any other fillet) - 300 gms
All purpose flour - 1/2 cup
Salt - as required
Pepper powder - 2 table spoon
Oil as required
Garlic - 10 pods

Onion rings - 1/4 cup
Chilli powder - 2 tea spoon
Honey/any sweetner - 3 table spoon
Soya sauce - 2 tea spoon

Preparation:
Step 1 - Marinate Fish fillet with salt, Pepper for 30 mins.
              Do not rest for longer
Step 2 - Heat oil in a pan
Step 3 - Dip the fillets in all purpose flour generously and shallow fry in oil
Step 4 - Heat oil in a kadai and fry Garlic pods, Spring onions
Step 5 - Add Soya sauce, Honey/ any other sweetness, Chilli powder and salt according to taste.
Step 6- Once the sauce is ready, place the fried fishes into it and leave it for 30 mins before consuming. 

Note :

WE used Basa fillet in this recipe.

Avakaya - Raw Mango Pickle





Ingredients 1:

. Garlic - 1/4 cup
. Red chilli powder - 1/2 cup
. Salt - 1/2 cup
. Methi seeds powder - 1 tbsp
. Mustered seeds - 1/2 cup

Ingredients 2:

. Raw Mangoes( Cut in to small pieces) - 2 no's
. Oil - 1/2 cup

Method:

1. Mix all the ingredients 1 - One by one.
2. Now add Mango pieces and at last add oil.

Potato Wedges..



Ingredients:
. Potatoes - 3 No's
. Italian seasoning - 3 tbsp
. Chilli seasoning - 1 tbsp
. Salt- 1 tbsp
. oil - 1 tbsp

Method:
1)Peel and cut Potatoes length wise and mix all the above ingredients.
2) Bake in microwave for about 30 mins at 220 degree centigrade.

Easy to made Crispy Potato Wedges are ready to serve..

Kottu Parotta.


Kottu Parotta is famous street food in Kerala and Tamil Nadu.. Here is the recipe of it with out egg(veg version). 

Ingredients:
. Chapati/Plain Paratha - 2-4 in nos.( Shred them with your hands)
. Onion - 1(cut long)
. Tomato - 3 (cut long)
. Ginger garlic paste - 1/2 tbsp
. Turmeric powder - 1/2 tbsp
. Chill powder - 1/2 tbsp
. Coriander powder - 1 tbsp each
. Green chilies - 2 (cut long)
. cumin seeds - 1tbsp
. Oil - 2 tbsp
. salt to taste
. Curry leaves - 3-4 in nos.
. coriander leaves for garnish

Method:
1) Heat oil in an iron skillet or a non stick pan. Keep the heat in medium.
2) Season with cumin seeds and curry leaves.Add turmeric powder,ginger garlic paste.
3) When the cumin seeds pops add chopped onions and green chillies. Fry them until light brown.
4) Add chopped tomatoes . Fry until the tomatoes cooked properly .
5) Then add coriander powder, chilli pdr and salt. Fry them for couple of minutes.
6) Add the shredded chapati/ plain paratha.
Garnish with coriander leaves and serve hot.

Gobi Manchuria/ Cauliflower Manchuria..


Ingredients :
. Cauliflower(gobi) - 1 medium
. Cornflour - 1/2 cup
. Maida/all purpose flour - 1/2 cup
. Red food color - a pinch
. Ginger garlic paste- 1 tbsp
. Salt - 3 tsp approximately
. 2 tbsp Soy sauce
. 2 tbsp tomato sauce
. 1/2 cup chopped onions,
. 1 tbsp chopped garlic
. 1 tbsp chopped ginger
. Corn water(add 1 tbsp corn powder in 1 cup of water)
. Coriander leaves

Method :
1. Cut the cauliflower in to small pieces,boil it in water for about 5 mins and keep it a side
2. Add Ginger garlic paste, color,cornflour,maida, salt and lime juice.Mix well.
3. Add gobi pieces, mix well. The whole pieces has to be nicely coated.
5. Add the pieces in the oil. Fry till golden brown color.
6. Remove from the oil, drain them and put it in the kitchen towel.
7. Heat oil in the pan and add chopped oinions,chopped garlic,chopped ginger and fry for some time.
8. Now add soya and tomato sauce and mix well. Add fried gobi pieces and mix well. At last add Corn water and fry for some time.
9. Garnish with coriander leaves and serve :)
